| Video Discription | Mrs.Vahchef is very fond of cooking and her Recipes are very unique and fit for busy women specially working women Brinjal and carrot pongal is a famous South Indian side to Idly, dosa and ven pongal. INGREDIENTS: Ghee 1 tsp Cumin seeds 1 tsp Curry leaves 1 spring Ginger(julians) ½ tsp Cashew nuts 8-10 nos Onions(chopped) ½ cup Carrots(chopped) ½ cup Green chillies 2 nos Salt To taste Rice 1 cup Masoor dal- red gram ½ cup Peppercorns 1 tsp METHOD: 1. Heat ghee in a pan, add cumin seeds, curry leaves ginger, cashew nuts, onions, carrots, green chillies and saute it, add salt and mix it. 2. Add rice, soaked masoor dal and mix and cook it. 3. Crush peppercorns and add to above pan, mix and check for seasoning. 4. Add salt place lid and cook it. 5. Cut the slender brinjal into pieces and add them to above pan and mix it, place the lid and cook it on slow flame until it is done. 6. Transfer into serving plate. 7. Now brinjal and carrot pongal is ready to serve directly or with pachi pulusu. |
