| Video Discription | Ingredients: - Plain flour/ Maida- 500 g -Oil- 100 ml -Water- 200 ml -Salt- a pinch *Sugar syrup -Sugar- 400 g - Water- 200 ml - saffron- 4-5 strands ( optional ) - Lemon juice- 1/2 to 3/4 tsp - cardamom powder- 1/2- 3/4 tsp Method: -Take a large bowl, add in the oil and salt in the flour and mix them all together. -Keep adding in the water little by little and make a stiff dough. -Cover and keep aside for 10 mins to rest. -In the mean time place the pan on fire by adding water to the sugar and make a one thread consistency sugar syrup by boiling it. -When boiling, simmer the flame. When 70% cooked then add the lemon juice and the cardamom./ saffron. -When the syrup gets to one thread consistency then turn off the flame. -Now massage/ knead the dough after resting for 10 mins. -Then roll it with a rolling pin as shown. Either take a Small dough piece or a large dough piece and roll it, so that the final size is rectangular. ( 8/4inch) -Also the sheet should rolled be as thin as possible. -Use a knife/ cutter, and make cuts in the middle of a rectangle , leaving both ends / edges free as shown. -Dab some water at the edges of the sheet/ rectangle, sprinkle some flour in the middle ( in between the cuts) so that it will not stick together. -Then fold it first once and sticking them together, then it has to be repeated again (folding), as shown. -Then pick up the folded rectangular dough, take one end and fold it reverse and bring it out from the middle of the cuts/ stripes. -The other end should be simple folded inwards, so that it shapes into a leaf. Confirm that both the ends are well in tact and snap off the extra dough. -Heat oil to medium flame and insert the leaves into it. Fry it on both sides until light golden brown at medium low flame. -Once cooked, take out the “Shahi Shakkar Para” / leaves from the oil after draining and submerge it in the sugar syrup for 3-5 secs. -When cooled relish it and store it in a container. |
