| Video Discription | Here's my method for making a sourdough starter from scratch ✨ Before starting, you'll need: - 1 clean jar with clear, straight sides - 1 scale - Unbleached white bread flour (or unbleached all-purpose flour) - Whole wheat flour - Water (I used tap water, but if the water in your area is heavily chlorinated, use bottled or filtered water instead.) My starter was maintained at a temperature of 75ºF (24ºC), so your results may differ from mine depending on how much colder/warmer your environment is. DAY 1 8 am - 15 g flour : 15 g water (1:1) DAY 2 8 am - 30 g starter : 15 g flour : 15 g water (2:1:1) DAY 3 8 am - 15 g starter : 15 g flour : 15 g water (1:1:1) DAY 4 8 am - 15 g starter : 15 g flour : 15 g water (1:1:1) DAY 5 8 am - 15 g starter : 15 g flour : 15 g water (1:1:1) 8 pm - 15 g starter : 15 g flour : 15 g water (1:1:1) Day 6 8 am - 15 g starter : 15 g flour : 15 g water (1:1:1) 12:30 pm - Starter is ready. 8 pm - 15 g starter : 15 g flour : 15 g water (1:1:1) Your starter should be ready to use by Day 6. You’ll know your starter is ready if it rises in a consistent, predictable pattern. That means your starter should double in size within 4-5 hours when fed at a 1:1:1 ratio at least three times in a row. If it’s not consistently rising by Day 6, that’s OK. Every starter is different and is affected by its unique environment. Simply continue feeding it with the same schedule as Day 5 (twice a day at a 1:1:1 ratio) until your starter has a predictable rise pattern as described above. Day 7 - Day 11 (maintenance feeding) 8 am - 10 g starter : 20 g flour : 20 g water (1:2:2) 8 pm - 10 g starter : 20 g flour : 20 g water (1:2:2) To maintain your starter, I suggest feeding it twice a day at a 1:2:2 ratio for at least five more days (Day 7- Day 11) so it can stabilize. You can, of course, permanently maintain your starter at room temperature with daily feedings.
