Ingredients:
Chicken Marination:
- Chicken - 1 kg
- Chilli powder - 3-4 tbsp
- Salt - 2 1/2 tbsp
- Cumin powder - 2 tbsp
- Coriander powder - 3 tbsp
- Garam masala - 1 tbsp
- Ginger garlic paste - 3 tbsp
- Lime juice - 2 tbsp
- Friend onion - 1 cup or 4 medium onions
- Whisked curd - 2 cups
- Oil - 1 cup
- Kasuri Methi - 2 tbsp
- Mint leaves - 1 cup
- Fresh chopped Coriander - 1 cup
- Green chillies - 4
For Cooking Rice:
- Basmati Rice - 750 grams to 1 kg
- shah jeera - 1 tbsp
- Green cardamom - 6
- Cloves - 6
- Cinnamon sticks - 3-4 pieces
- Bay leaves - 4
- Salt - 3 tbsp
- Saffron strands soaked in warm milk
- Water to boil the rice - approx 3 liters
- Mint leaves - 1/2 cup
- Coriander leaves - 1/2 cup
- Slit Green chillies - 6
- Lime juice - 1 tbsp
- Ghee - 2 tbsp
- Foil to use for dum cooking
Process:
- Marinate chicken with the spices listed above and set aside for atleast 2 hours
- For rice, take 2 cups water for 1 cup rice and bring to boil
- Add salt, water should be more than just salty as rice will only observe 50% of salt
- Add whole spices, oil, green chillies, mint, coriander, ginger garlic paste, lime juice and 1 tbsp ghee
- Close lid and boil for 10 mins until all flavors are released. (Optional - Open the lid and remove the all spices)
- Once rice is cooked 60-70%, layer the rice on top of marinated chicken. Add fried onion in between for extra flavor
- Finally, add ghee, saffron mix, fried onion, mint, coriander leaves and rose water (optional)
- Close the foil tightly and dum cook biryani for 5 mins on high heat, 10 mins on medium flame, 10 mins on low flame and 10 mins rest
- Open and enjoy hyderabadi dum chicken biryani 😋
