Here's a basic recipe for making Bellam Thalikalu: Ingredients: Rice flour: 1 cup Water: 1 1/2 cups Jaggery (Bellam): 1/2 cup (grated or finely chopped) Ghee (clarified butter): 2 tablespoons Cardamom powder: 1/2 teaspoon Water: 2 cups Oil for deep frying Instructions: Start by making the rice flour dough. Boil 1 1/2 cups of water in a pan. Once it comes to a rolling boil, add the rice flour gradually while stirring continuously. Cook the mixture until it forms a smooth dough. Make sure there are no lumps. Remove it from heat and let it cool for a while. Once the dough has cooled down, knead it into a smooth and soft dough. Grease your hands with a little ghee to prevent sticking. Take small portions of the dough and shape them into small cylindrical or oval-shaped pieces. These are the "thalikalu." In a separate saucepan, add 2 cups of water and the grated or finely chopped jaggery (bellam). Heat it on medium heat, stirring continuously until the jaggery completely dissolves and the mixture thickens slightly. Add cardamom powder for flavor and mix well. Once the jaggery syrup is ready, reduce the heat to low and add the thalikalu into the syrup. Stir gently to coat the thalikalu with the jaggery syrup. Allow them to simmer in the syrup by adding cardamom powder and ghee for a few minutes to absorb the flavors. now add grated coconut and simmer for 2-3 mins Turn off the heat and let the Bellam Thalikalu cool down for a while. The jaggery syrup will thicken as it cools. Once the Bellam Thalikalu have cooled to room temperature, they are ready to serve. You can garnish them with some chopped nuts like cashews or almonds if desired.
