| Video Discription | #백종원 #가지밥 #가지요리 요즘 가지가 제철이죠? 오늘은 가지를 이용한 맛있는 가지밥 입니다. 갈은 고기를 넣으면 더욱 맛있지만 없어도 충분히 맛있습니다~ 대신 *과식주의* 하세요!! ================== 가지 밥 (양념장) (4인분) * 가지 밥 재료 쌀 2컵(320g) 정수물 1과2/3컵(300g) 식용유 약 6큰술(40g) 대파 1/2대(50g) 진간장 3큰술(30g) 가지(大) 4개(800g) * 양념장 재료 부추 2/3컵(40g) 대파 1/3컵(20g) 청양고추 2개(20g) 간 마늘 1큰술(20g) 진간장 2/3컵(120ml) 황설탕 1/2큰술(6g) 굵은 고춧가루 2큰술(16g) 깨소금 2큰술(12g) 참기름 1큰술(7g) *옵션 재료 달걀 1개 식용유 3큰술(21g) [만드는 법] * 가지 밥 만드는 법 1. 쌀은 깨끗하게 씻어 15분 정도 불린다. 2. 가지는 길게 반 잘라 두께 0.5cm 반달 모양으로 썬다. (가지 모양을 자유롭게 썰어도 무관하다.) 3. 대파는 송송 썬다. 4. 넓은 팬에 대파와 식용유를 넣고 수분이 날아갈 때까지 볶아 파 기름을 낸다. 5. 진간장을 코팅 팬 가장자리에 빙 둘러 넣는다. 6. 가지를 넣고 숨이 죽을 때까지 저어가며 볶는다. 7. 불린 쌀을 전기 압력밥솥에 넣고 물 양을 맞춘다. (가지에서 물이 나오므로 평상시 밥물 양보다 적게 잡는다.) 8. 쌀 위에 가지를 올리고 취사를 누른다. 9. 완성 접시에 가지 밥을 담아 양념장과 함께 낸다. (기호에 맞게 달걀 프라이를 올려준다.) * 양념장 만드는 법 1. 대파, 청양고추는 길게 반 갈라, 부추는 잘게 송송 썬다. 2. 대파, 청양고추, 부추, 간 마늘, 진간장, 황설탕, 굵은 고춧가루, 깨소금, 참기름을 넣고 양념장을 만든다. Gajibap (eggplant rice) with sauce (4 servings) [Ingredients] * Gajibap 2 cups (320g) rice 1&2/3 cups (300g) purified water 6 tbsp (40g) cooking oil 1/2 stalk (50g) green onion 3 tbsp (30g) dark soy sauce 4 large (800g) eggplants * Sauce 2/3 cup (40g) chives 1/3 cup (20g) green onion 2 (20g) Cheongyang peppers 1 tbsp (20g) minced garlic 2/3 cup (120ml) dark soy sauce 1/2 tbsp (6g) brown sugar 2 tbsp (16g) coarse red pepper powder 2 tbsp (12g) ground sesame seeds 1 tbsp (7g) sesame oil * Optional 1 egg 3 tbsp (21g) cooking oil [Directions] * Gajibap 1. Rinse the rice clean and soak in water for about 15 minutes. 2. Slice the eggplants in half lengthwise and cut at a thickness of 0.5 cm in the shape of a half-circle. (Cut the eggplants however you like.) 3. Chop the green onion finely. 4. Add cooking oil to a large pan and stir-fry the green onion until the moisture is gone to infuse the oil with green onion. 5. Pour the dark soy sauce around the edges of the pan. 6. Add the eggplants in and stir-fry until softened. 7. Pour the soaked rice in a rice cooker and add water. (Use less water than usual because water comes out of the eggplants.) 8. Place the eggplants on top of the rice and start the rice cooker. 9. Scoop the cooked gajibap in a bowl and serve with the sauce. (Top with a fried egg if desired.) * Sauce 1. Slice the green onion and Cheongyang peppers in half lengthwise and chop them finely. Chop the chives finely as well. 2.
