| Video Discription | 手擀面用什么面粉？中筋面粉就可以做出非常好的手擀面。其实更重要的是揉面，醒面，擀面和煮面的过程。 我做的是岐山臊子面里的面条，非常薄，而且比较细一些，最主要的是它非常非常劲道。岐山面是碱性面条，用到很多碱面。颜色的黄黄了，碱味比较重。如果只做一般的面条不需要加这么多的碱面。或者可以不加碱面，也可以放一两个鸡蛋清。 具体配方如下： 中筋面粉一杯半 水半杯 盐1/4小勺 碱面1小勺 （一般面条可用1/4小勺碱面或者不放） 淀粉适量 ingredients all purpose flour 1.5 cups water 1/2 cup salt 1/4 teaspoon dietary alkali 1 teaspoon (for regular noodles, use 1/4 teaspoon.
