| Video Discription | 想好做出又嫩滑有鲜香麻辣的川味口水鸡，这几个步骤少不了，一个是煮熟鸡后一定要浸泡冰水，这样能最大限度的使得鸡肉变得皮脆肉嫩， 其次是调料汁一定要调好，可根据自己的口味轻重适当增减调料的比例。 #口水鸡 #凉菜 #spicychicken 原料 Ingredients 鸡腿 4只 Drumstick 4 pcs 葱段 少量 Some Chopped Spring onion 姜片 3-5片 Sliced ginger 3-5 slices 花椒粒 10克 Sichuan Pepper 10g 调料 Sauce 生抽 2勺 Soy Sauce 2tbsp 料酒 1勺 Cooking wine 1tbsp 香醋 3勺 Vinegar 3tbps 芝麻香油 1勺 Sesame Oil 1tbsp 花椒油 1勺 Pepper Oil 1tbsp 辣椒油 2勺 Chili Oil 2tbsp 蚝油 2勺 Oyster sauce 2tbsp 盐 少量 A pinch of salt 砂糖 3小勺 White Sugar 3tsp 小米椒粒 少量 Some Chopped Baby Red Chili 葱花 少量 Some chopped spring onion 蒜末 少量 Some smashed garlic 鸡腿汤 2勺 Chicken soup 2 tbsp 花生碎 少量 Some crushed peanuts 熟白芝麻 少量 Some cooked white sesame 做法： 1． 鸡腿放入冷水中浸泡20分钟， 泡出血水后沥干。 2． 冷水下锅，放入葱段，姜片，花椒粒和鸡腿， 大火煮开后转中火煮10分钟左右后关火。 关火后焖上6-8分钟左右，可用筷子扎鸡肉最厚的地方不渗血水。 3． 鸡腿捞出，放入冰水里浸泡10分钟左右。这样操作会让鸡肉口感更鲜嫩。 4． 取出鸡腿，将鸡肉撕成小条备用 5． 将以上所有调味料加入小碗中（大家可根据自己口味适当增减以上调料的配比）， 拌匀成调味汁 6． 将调味汁淋在手撕鸡上拌匀放入冰箱里大约20分钟，这样更入味。 7． 装盘时，撒上花生碎，熟白芝麻，葱花和小米椒粒，即可食用。 |
