SEMIYA KESARI RECIPE Recipe Category: Dessert | Recipe Cuisine: South Indian Semiya(Fine Vermicelli) – 1 cup loosely packed Milk – 1 and 1/2 cups Water - 1 cup Sugar – 3/4 cup Melted Ghee – 3 tsp Cardamom powder – 1/2 tsp Cashewnuts – 10 broken In a deep bottom pan add 2 tbsp ghee. When hot add broken cashews and saute till golden. Once done remove them and let them cool. To the same pan add vermicelli to it. Roast till they turn to light golden pink in color. Then add milk and water and mix well. let it cook with occasional stirring. Once it is cooked fully add sugar and mix well. Once the liquid content evaporates, start adding remaining 1 tsp ghee and keep mixing. Do not mix vigorously as semiya will tend to break. Add crushed cardamom. When the mixture tends to leave the pan, add the fried dry fruits like cashews. Mix well and let it cook for another 1-2 mins on low. Your Semiya Sheera is ready to go.
