| Video Discription | ** RECIPE - GUTTI VANKAYA CURRY / SPICY BRINJAL CURRY (ANDHRA STYLE) ** Note: Gutti Vankaya Curry is done in different styles in different regions of Andhra. Below one is the easiest & quick recipe of all. We will try to post other region variations of this recipe also soon in 'ChetanaFoods' channel. Please subscribe & stay tuned. Vankayalu / Brinjal = 250 gm * Wash them well with Salt water Masala Stuffing: • Onion = 1 medium • [ OPTIONAL ] Tomato = 1 medium • Tamarind = 1/2 Small Lemon Size • Salt = 1.5 tsp (adjust as per taste) • Red Chilly Powder = 1 TBSP (adjust as per taste) • Turmeric Powder = 1/4 tsp • Dhaniya Powder = 1 tsp • Garam Masala = 1/2 tsp • Jeera Powder = 1/2 tsp • Ginger-Garlic Paste = 1 tsp • Coriander Leaves = handful * Mixie all above to make fine masala paste. Process: • Cut & make a cross mark on each Brinjal using knife. Stuff the masala into Brinjal. • Keep all stuffed brinjals aside. • Heat OIL (1/4 Cup) in a Kadai. • Add: Aavaalu (1 tsp), Jeela Karra (1 tsp), Curry Leaves (handful) in Kadai • Fry them for a minute. • Add all stuffed brinjals in Kadai. • Also pour remaining masala stuffing into same Kadai. • Cook them with lid closed until Brinjals & Masala are well cooked. • Note: To get more gravy, add 1 Cup of Water, Cook for few minutes till it thickens and adjust the Salt accordingly by tasting the gravy. • Mix well once in a while. • The curry is ready. • Note: If you like Brinjals as a semi-gravy or fry, then do NOT add water & cook for some more time by opening the lid. ** Feel free to leave a Comment if you need any clarifications about this recipe. ---- ★★ FULL RECIPE VIDEO Coming Soon !
