| Video Discription | Bobbatlu is one of the most important traditional dishes made for all the Hindu festivals or on any special occasions. It is a traditional sweet flatbread made with chana dal and jaggery. Usually, these are made with maida, but here I’m showing the healthier version which is made out of whole wheat flour. These Polis taste good when served hot with warm milk and ghee. Do try this recipe for the upcoming festival. Ingredients: ========= Ghee- 2 tbsp Outer Layer: ____________ Whole wheat flour - 1 cup Fine sooji - ¼ cup Salt - a pinch Turmeric powder - ¼ tsp Oil - 1 tbsp Stuffing: ________ Chana dal - 2 cups Jaggery - 2 cups Dry coconut powder - ¼ cup Cardamom powder - 2 tsp Steps: ===== Dough preparation: 1. In a bowl, add flour, sooji, salt, and turmeric powder. Mix it well. 2. Make a soft dough by adding water. Knead the dough for about a minute. 3. Add oil and knead again. The dough must be soft but not sticky. 4. Cover and rest it for 2 - 3 hrs. Stuffing: 1. In a cooking pot, wash the channa dal 2-3 times. 2. Add enough water to the dal and soak for 30 mins. 3. Add one cup of water to the inner pot and place the trivet. 4. Place the cooking pot in the Ip. 5. Close the lid and pressure cook for 10 mins and quick release after 10 mins. Be careful not to get it mushy. 6. Once the steel pin drops down open the lid carefully. 7. Strain the cooked dal and save the water to prepare rasam. 8. Mash the dal with the potato masher and it aside. 9. Heat the pan on medium flame, add Jaggery once it starts to melt add cardamom powder, dry coconut powder. 10. Add the cooked dal and let it cook on low heat until the mixture gets thickened. 11. It takes a little longer if the mixture is runny. 12. To check the mixture consistency, put a spatula in the mixture , if it stands then the stuffing is ready. Let it cool completely. 13. Make lemon-sized balls and keep them aside. Making Poli: 1. Take the dough and knead it again for about 2 mins and divide it into equal parts. Make it into round-shaped balls and keep them aside. 2. Take a plastic cover or parchment paper, dust it with the flour. 3. Now, take one part of the dough ball and dust it with the flour. Spread it with your fingers. 4. Place the poornam ball in the center and cover it with the dough. Add a plastic sheet on the top. 5. First , spread the dough carefully with the fingers and then roll the dough into thin layer using the roll pin. 6. Heat a Tawa pan on medium heat, gently place the rolled dough on the pan. 7. Apply ghee on both sides and cook it on low heat. 8. Serve hot with warm milk or ghee. Note: Save the water in which channa dal is cooked.
