More Vegan Food Inspiration here: 1 Week of Vegan Lunches: https://www.youtube.com/watch?v=JyKktDMxEeo Make Ahead Vegan Meal Ideas: https://www.youtube.com/watch?v=Aj6R55xFaxo What I Eat in a Week as a Vegan: https://www.youtube.com/watch?v=hDX6VnHUYTU CONNECT WITH ME: Instagram: mina_rome Email: [email protected] Vegan Amino: Mina Rome INGREDIENTS MEAL #1: Pepper, Tomato + Bean CousCous Bowl 150g couscous, dried (¾ cup + 1 ½ tbsp) 300ml water, for cooking the couscous (~ 1 ¼ cup) 1 pepper 1 onion 1 celery stalk 1 tsp olive oil 1 clove garlic 1 tbsp tomato purée 1 can tomatoes 1 can white beans juice of ½ lemon ½ cup water, or more for a thinner consistency (125ml) 1 tsp dried Italian herbs ½ tsp smoked paprika salt to taste → 1 handful of fresh spinach per serving → serves 4 MEAL #2: Vegan Pizza Rolls 350g spelt flour (3 cups) + more for the surface 100g whole wheat flour (½ cup + 3 tbsp) 1 ½ tsp salt 1 tsp dried Italian herbs 1 pack of dry active yeast (7g) 1 tbsp raw sugar ¼ cup water (60ml) ½ cup non dairy milk (125ml) ½ cup aquafaba (chickpea water) (125ml) ½ cup marinara sauce (125ml) 1 red onion, cut into rings a handful of parsley, chopped 2-3 tbsp nutritional yeast vegan cheese (optional) → yields 12-14 rolls → serve with more marinara, hummus, raw veggies, a quick salad etc *Warm places to let the dough rise would be next to a window with the sunshine coming through, close to the heating, in the oven with only the lights turned on ... *When taking the dough out of the fridge the next day, give it a few more minutes of kneading to warm it up. Bean Salad with Agave Mustard Dressing: ¼ can chickpeas ¼ can kidney beans a handful of cherry tomatoes 1 stalk celery 1 handful of basil 1 tsp mustard 1 tsp agave 1-2 tbsp MEAL #3: Creamy Broccoli Pasta → serves 2 2 cups broccoli, frozen (200g) ½ cup of peas, frozen (70g) 1 clove garlic 1 tbsp nutritional yeast ¼ cup pasta water (60ml) 2 tbsp fresh lemon juice salt to taste (I used ⅓ tsp) ½ cup non dairy milk, unsweetened (125ml) 200g pasta (7 oz) 1 tsp olive oil Toppings of your choice!
