| Video Discription | ****ounced as Ho-li-gae Holigae is a festive food of North Karnataka made on the Ugadi. I learnt this recipe from my mother-in-law and loved it from the first day it was made. This dessert is made with Jaggery ensuring the intake of Iron for the body. And the base flour we use is that of wheat or whole grain atta that will aid in digestion as it comes with good fibre content. It is one of those simple dessert recipes that can be made in a jiffy and is so nutritious. Groundnuts are packed with a whole lot of proteins (22 – 30%) and are low in carbohydrates. Ingredients Wheat flour – 2 cups Salt Water For filling Jaggery - ½ cup Roasted groundnuts – ½ cup Cardamom/Elaichi – 2 nos. Salt – 1tsp Ghee – for shallow fry Preparation 1. Make dough similar to that of chapatti dough with Wheat flour, salt and water and set aside. 2. In a blender, add roasted groundnuts, jaggery elaichi and pulse them until they are ground coarsely. 3. Divide the dough into equal sized balls as you do for chapathi. 4. Now apply oil on your hand and make a well with a ball and place a tbsp of filling in it and seal it. 5. Roll out the filled dough balls as you roll out a chapatti, use less force to roll if not the filling may come out. Diameter of holige can be 10 cms. 6. Repeat the process for all the filled dough balls. 7. Heat tawa on a medium flame and once the tawa is hot, put the rolled out holige and shallow fry them one by one with ghee until they become golden brown on either sides. 8.
