| Video Discription | Get in your veg with this delicious and easy red cabbage rage recipe. Use a nice textured pasta so the sauce sticks to it well. This yields 2 servings Ingredients: 4 tablespoons olive oil 1/2 medium red cabbage 1/2 onion, diced 3 cloves garlic, crushed 1/2 cup double concentrate tomato puree 1/2 tsp dried oregano 3/4 tsp chilli flakes (optional) 1/2 tsp sugar 1/2 cup cranberry juice Salt to taste 1/2 tsp Ground black pepper Freshly chopped parsley to garnish Pasta of your choice Water to boil pasta Method: 1. Quarter up the red cabbage, with the core still attached. 2. Heat up a large flat pan on medium high and add a little oil. Add your cabbage, and roast each side down for 10 minutes. Keep rotating and roasting until each side is charred and the cabbage is softened. Place these aside to cool. 3. Next, boil the pasta. Based on what type you use, follow the pack instructions. 4. Whilst the pasta is boiling, we will chop up the red cabbage. Chop it up into small pieces. Place these on the side. 5. Once the pasta is cooked, save the pasta water, this will be handy later on. 6. Place the same flat pan we roasted the red cabbage on to medium heat and add 2 tbsp of oil. 7. Once the oil is heated, add the onions and stir gently. Once they’re slightly cooked, add salt and pepper and let the onions soften a little further, we don’t want them too browned or caramelised. 8. After 5-6 minutes of cooking the onions, add the garlic and mix well. Allow the garlic to cook for a minute. 9. Add the tomato puree and mix well. We will now add the sugar and if using, the red chilli flakes and the oregano. Give everything a good mix and then follow with the cranberry juice. This is to replace the use of red wine, so if you prefer to use that, you can do so. Cranberry juice can also be replaced with apple juice. 10. Give the sauce a good mix and allow to cook for a few minutes. Now, we’re ready to add the red cabbage that we had sliced earlier, followed with a cup of pasta water. 11. Give the sauce a good stir so the cabbage and tomatoes are well incorporated. Add a further 1-2 cups of water and stir. 12. Place the heat own low and cover the pan with a lid, letting the sauce cook gently. 13. Keep covered for about 10 minutes, stirring every so often. You want to see the red cabbage soften further and mix well into the tomatoes and onion sauce. Add a little more pasta water if you like and keep covered for a further 5 minutes. 14. Now remove the lid and if you have a caramelised, sauce like this, we’re ready to serve. 15. Place your pasta in a bowl and top with the sauce. Finish with a sprinkle of freshly chopped parsley.
