The first of many batches to come from Chad Robertson's Tartine Bread book, with the help of Grace, a 12-day-old sourdough starter. 00:09--00:14 - float test passed with last night's mixed leaven 00:14--00:44 - mix dough 00:44--00:49 - autolyse (40 mins) 00:59--01:44 - bulk fermentation (4 hrs at 70F, turning every ½ hr) 01:45--08:49 - initial shaping 08:49--08:52 - bench rest (30 mins) 09:07--14:17 - final shaping 14:17--15:59 - load baskets for final rise (12 hrs refrigerated) 15:59--18:00 - load dutch oven 18:00--18:25 - oven shots (20 mins @ 450 covered, 25 mins uncovered @ 450) 18:26--18:57 - crumb shot loaf #1 (8 hr final rise, less sour more wheaty flavor) 18:57--20:44 - crumb shot loaf #2 (12 hr final rise, perfect flavor) 20:40--21:45 - sandwich crunch time! Notes for round 2: use a round container for bulk fermentation, flour the board for initial and final shaping, shape gentler and swifter, buy a combo cooker for greater rise, use pizza peel to gently flip dough onto and slide onto cooker, dip lame in water and use corner edge for swifter score, and bake out stronger for a darker crust.
