Tamarind Rice
Picked up this flavorful rice recipe from one of my South Indian friend. Tamarind Peanuts Rice are consumed a lot in South as it’s so flavorful because of Tamarind & added crunch of peanuts makes it an all-rounder recipe. Everyone in the family will love it, must try.
Ingredients :
2 tsp Coriander Seeds (Dhaniya)
2 tsp White Sesame Seeds (Safed Til)
1.5 tsp Cumin Seeds (Jeera)
1 spoon Fenugreek Seeds (Methi)
10-12 Peppercorns (Kali Mirch)
2 + 1 Dry Red Chillies
2 tsp Dry Coconut (optional)
1.5 tbs Oil
1 small piece of finely chopped Ginger (optional)
1/4 cup raw Peanuts (Sing)
1 tsp Mustard Seeds (Rai)
Pinch of Asafoetida Powder (Hing)
1.5 tsp Split and Skinless Lentils (Urad Dal)
1.5 tsp Bengal Gram Split (Chana Dal)
2 Green Chillies
Few Curry Leaves
1/2 tsp turmeric powder
Salt as per taste
3 tbs Tamarind Pulp (soaked 1/4 cup Imli in hot water & squeezed out the pulp)
1 spoon Water
Small piece of Jaggery (Gur)
2.5 cup Steamed Rice
Method :
To Make Masala:-
Heat the pan, dry roast below ingredients
2 tsp Coriander Seeds (Dhaniya)
2 tsp White Sesame Seeds (Safed Til)
1.5 tsp Cumin Seeds (Jeera)
1 spoon Fenugreek Seeds (Methi)
10-12 Pepper Corns (Kali Mirch)
Mildly roast the mixture
Now add 2 Dry Red Chillies
Add 2 tsp Dry Coconut (optional)
Roast for 5 min on low heat
Turn off the heat, let it cool down & churn to make Masala
To Make Rice:-
Heat 1.5 tbs Oil in the same pan
Add a small piece of finely chopped Ginger (optional)
Add 1/4 cup raw Peanuts (Sing)
Fry them well and add 1 tsp Mustard Seeds (Rai)
Add a pinch of Asafoetida Powder (Hing)
When Rai crackles, add 1.5 tsp (Urad Dal)
Add 1.5 tsp (Chana Dal)
Fry until dal turns golden-brown
Then add 2 Green Chillies
Add 1 Dry Red Chilli
Add few Curry Leaves
Add 1/2 tsp turmeric powder
Add Masala prepared
Add Salt as per taste & mix everything well
Add 3 tbs Tamarind Pulp
Add a spoonful of Water
Add a small piece of Jaggery (Gur)
When Masala is nicely fried, add 2.5 cup Steamed Rice & mix it well
Turn off the heat and serve it warm
