| Video Discription | Swiss Chard Roll Makes about 17 various sizes 15-17 Swiss chard leaves- cut off stems and set aside Cook ½ cup sushi rice in 1.5 cups salted water Bring water to a boil, add rice, cover with a lid, and cook for about 30 minutes If you do not have sushi rice, use any rice and cook until sticky. Finely chop ¼ of the following, then dry and sauté until tender. Onion Carrot Multi-color peppers Swiss chard stems 1 clove garlic minced Stir into the hot rice: 2 tablespoons Black Olive Pesto or several tablespoons chopped olives of choice Cooked veggies Several shakes of black pepper. Salt if desired. Cool mixture to room temperature Dip Swiss Chard leaves, one at a time into very hot water for a few seconds. Just go in long enough to wilt. Place about 1-3 tablespoons of cooled rice. This will depend on the leaf size. Place the rice in the center along the stem. Form the rice into a log shape. Compact the rice. Make a small slit in the stem of the leaf at the bottom of the leaf to make rolling up easier. Fold the bottom and top of the leaf in over the rice. Squeeze rice log. Then finish rolling up, as you do, continue to squeeze the rice together forming a tight roll. Chill for several hours or overnight. Serve with soy sauce or garlic chili sauce. |
