| Video Discription | So - Tender Swiss Steak 1 cup all-purpose flour 2 teaspoons salt 1 teaspoon pepper 2 pounds round steak, cut into serving sized pieces Vegetable oil 1 medium to large onion, sliced and separated in rings 2 cups boiling water 2 Tablespoons Worcestershire Sauce Gravy: 1/4 cup all-purpose flour 1/4 teaspoon salt 1/8 teaspoon pepper 1 1/4 cups beef broth In a shallow bowl, combine flour, salt, and pepper. Dredge steaks a few pieces at a time. In a skillet, brown steak in oil on all sides. Layer onion slices and steak, alternately in a Dutch oven. Combine boiling water and Worcestershire sauce and pour over the steak and onions. Cover and bake at 325° for 2 to 2 1/2 hours or until the meat is very tender. Remove steak and onions to a serving platter and keep warm. Save the pan juices. Make the gravy by placing the flour, salt, pepper, and broth in a jar with a tight fitting lid. Shake until this is well mixed. Using a sauce pan, bring the pan juices to a boil, then pour in the broth mixture. Stir for approximately two minutes until slightly thickened.
