| Video Discription | This is a video I've debated doing for a long time, in which I will be testing the claim that potatoes and rice can be cooked in a certain way so that it eliminates or significantly reduces the impact on blood glucose and ketones by creating "resistant starch". I STRONGLY recommend reading the articles linked below for a thorough description of resistant starch and the associated claims about it -- especially the Johns Hopkins article. I fully expected this experiment to be a HUGE fail, and as such, I didn't approach it with a whole lot of scientific rigor. Now that I've seen these initial results, I will be conducting more tests and making more videos with a far more controlled / scientific approach. That said, you should not expect a full lab study level of science out of this or any other video in this series. I'm just one guy doing a test on himself for entertainment purposes. *PLEASE READ MY PINNED COMMENT BEFORE COMMENTING.* It will save us both some time. 🙂 I was quite surprised at the results of this test, but it's important to remember that each individual's results may vary. I would not recommend trying this out unless you have a blood glucose and ketone monitor. Also, when I prepared the rice for the initial cook, I rinsed it thoroughly (like 5 or 6 times). I do this to make the rice less gummy, but I'm sure it also rinses off A LOT of starch.
