To make Rice Kheer - • Wash and soak rice for 10-15 minutes. • Heat up some ghee into kadhai and add fresh coconut slice and fry till it gets golden color then add chopped dryfruits and raisins and saute for a min and take them out. • Now again Heat up some ghee in kadhai and add soaked rice and saute for 2-3 minutes. • Then add second batch of coconut milk (thin milk) and bring it to boil and then cover cook on low heat for about 7-8 minutes or till rice gets nice mushy texture. • Meanwhile into another vessel add chopped jaggery and 1 Cups water and heat till the jaggery melts and then turn off the heat. • Once rice is cooked then strain the jaggery water into cooked rice and bring it to boil and again cook for about 2-3 minutes. • Then last add first batch of coconut milk (thick milk) and cook for 2-3 more minutes. • Then add saffron sticks, cardamom pw and stir well. • At last add fried coconut & dryfruits and mix well. • Delecious Rice Paysam ready Indian Food culture is very vast. In coastal areas people eat sea food and food that keep your body cool. In Gujrath khaman dhokla is famous, Rajsthani Daal bati with lots of ghee can be eatern in winters to keep the body warm. In Maharashtra we eat more coconut, Rice, jowar bhakar, Maharashtrian Puranpoli with lot of ghee, Punjabi chole, rajama chaval, paneer recipes, Indori poha, South Indian Idly, Dosa, Sambar, Andhra Rasam bhat, dalma from orisa. Keralas famous food is Payasam. Paysam can be made in different ways, like moong daal payasam, chana daal paysam, rice paysam and shemai paysam.
