| Video Discription | Hello friends, here is my Baguette 1 2 baguette workshop i hope you enjoy :) Equipment list Spiral mixer Baguette peel Baguette tray (if baking in a home oven) Lame Baguette cloth Ingredients (makes approx. 10 baguettes) 1kg T65 Grand Siècle flour* 700g water (+ 20-40g extra) 120g starter (12% of your flour base) 4g yeast *If you don’t have this you can substitute with strong bread flour Method Day 1 1. In a bowl mix the water, sourdough starter and yeast together by hand 2. Next add the flour and continue mixing by hand until it is well combined 3. Set aside for 30 minutes to autolyse 4. After 30 minutes, add to your electric mixer and mix for 5 minutes on a fast speed 5. Add the extra water at the end of mixing until the dough is smooth and doesn’t stick 6. Remove the dough from the bowl and into a lightly oiled container and let it rest for 30 minutes 7. After 30 minutes, give it a light fold and put it in the fridge overnight at 4c Day 2 1. Preheat the oven to 250c – if you are using a home oven, you also need to add a bowl of water to the bottom of your oven to create steam Leo the Baker – Baguette Recipe | @leo.thebaker | www.leothebaker.com 2. Take the dough out of the fridge, divide and pre-shape it into 350g balls or rectangular shapes (which are slightly easier for the final shape) 3. Let them rest for 20 minutes, before final shaping each one 4. Once shaped, rest/prove them again in a lightly floured baguette cloth to avoid them sticking for 45 minutes - 1hour in 27c. 5. Transfer the baguettes from the cloth (using a baguette peel) onto a baking sheet if you have a bread oven, or onto a baguette tray if you are using a home oven and score each one 6. Load into your pre-heated oven and spray generously with water before closing the door 7. Bake for 20 minutes until beautifully golden in colour 8. Enjoy with butter and jam J (or whatever you enjoy most!) NB – all the techniques are demonstrated in the course video – remember, repetition and repetition is the secret of mastery! |
