Minimalism and slow living have changed my life in a lot of ways the last couple of years, but I've never really taken the time to reflect on the real lessons I've learnt that have enable me to enjoy a simple life. Beyond just decluttering my home and slowing down, there are a couple of key things I only wish I stopped sooner in order to live a simpler life that actually are more impactful than I thought. These are things that have changed my perspective on value and what it means to truly live in the present moment. I wanted to share some of my thoughts with you in this video about the more meaningful and impactful side of slow living you might not have recognised and the key lessons minimalism and simplicity have taught me. Holly 🫶 ✨ BLACKBERRY & LEMON CAKE Ingredients - 2 large eggs - 80g maple syrup - 60g milk of choice (i used oat) - 3tbsp lemon juice - 2tsp vanilla extract - 1.5tbsp lemon zest - 240g plain flour - 1tsp baking powder -1 tsp bicarbonate of soda Frosting ingredients - 60g heavy whipping cream - 4oz mascarpone or cream cheese - 60g powdered sugar - 1tsp vanilla extract - 100g juiced blackberries Method 1. Preheat the oven to 170 degrees C. 2. In a large bowl mix together the wet ingredients and then the dry with a whisk until smooth. Do not over mix and its ok if there's a couple of lumps! 3. Transfer the batter to a lined pie baking tin and bake for approx 25-30 mins until golden and check the centre is cooked with a prod (that needs to be clean). 4. To make the frosting squash the blackberries with a potato masher in a sieve so the juice seperates. 5. Whip the cream and mascarpone until thickened, fold in the blackberry juice, vanilla and powdered sugar until a vibrant purple colour. 6. Leave the frosting in the fridge to set and add to the cake once the sponge is cool. 7.
