| Video Discription | Pirjan Birjan Recipe ( BÜRYAN RECİPE FROM BALKANS) Pirjan is an important dish in Balkans cuisine made on Eid and holiday tables in the Balkans. Before eating Pirjan, at the table established in the morning; the chicken soup and handmade unleavened bread which is called ‘’Pogaça ‘’are served. Pirjan generally served lamb stew and Bosniak börek are eaten. • Prep: 5 -6 mins - Servings: 4-6 • Cook: 30 mins. - Yields: 35 TL • Additional: 10 mins. • Total:45 mins Ingredients: • 8 -10 Chicken drumsticks • 2 cups of rice • ½ medium onion • 3 tablespoons of sunflower oil • 1 tablespoon of butter • 3 cups of chicken broth /stock • Salt and black pepper For Chicken Stock/Broth • 8-10 Chicken drumsticks • ½ medium onion • 2 cloves of garlic • A bunch of parsley stems • 1 large and1 medium carrots • 1 teaspoon black pepper • 1 dessert spoon salt Tips and Tricks • Cover the rice you remove from the oven with a tray so it won’t dry out. • Boil the chicken drumsticks with Onion, carrot, garlic and a bunch of parsley stems. • Add 5-6 ground black pepper in broth/stock • Roast onions over low heat (onion sweating, this technique describes the cooking process of softening onion and drawing out its natural sweetness without allowing it to take on any colour ). Preparation: 1-Boil the chicken drumsticks in a pot until the meat is tender. 2-Chop the shape of the onion of small dice ( brunoise). 3-Put the sunflower oil and butter in the pot and roast the onions. 4-Wash the rice until there is no starch left, that is, until clear water flows from under it, and take it into a wire strainer. 5- When the onion is roasted Add the rice to the pot, stirring and roast them 5 minutes. 6- Put roasted ingredients in a baking sheet or Pyrex 7-Put the boiled chickens over to the roasted ingredients 8-Pour the chicken stock/broth over the ingredients in the baking sheet/pyrex. 9-Top with the sliced tomatoes ( If you want) and add the black pepper and cook in a preheated oven at 180 degrees Celcius until the rice is drained and the chickens are lightly browned. |
