It is a popular dessert in South India, which is done during special occasions like weddings or ceremonies, whereas in North Indian it is known as Sheera or Sooji ka Halwa. There are many flavored kesari bath available ( Pineapple, Banana, Mango, Coconut, fruits etc ). Today I will be sharing with you one such unique recipe made of rose milk as the base for the flavor. Ingredients required Semolina 1 cup ( any size ) Sugar 2 cup ( same used for semolina ) Water 2 cup ( same cup ) Milk 1 cup Rose syrup 75 ml Rose water 2 tbsp for flavor Whole cashews few Raisins few Cardamom powder 1 t spoon Ghee 150 ml Method : Mix rose syrup 75 ml on 1 cup milk and keep aside. Heat the pan on a medium flame, add ghee 150 ml, when hot add cashews and raisins to it, saute till light brown in color. Add Sooji on the tava and roast till light brown in color, remove and keep aside. Add water 2 cups to the pan and bring it to boil, add the roast Sooji to it and mix well so there are no lumps formed. Add sugar 2 cups and mix well, after a few minutes add the rose milk to it and reduce the flame, mix well so that it doesn't stick to the pan, once the bubbles start to blow in the middle and the texture becomes thick, switch off the flame. After a few minutes add little ghee on top of it, Cardamom powder 1 pinch and rose water 2 tbsp, mix all together gently and serve hot immediately. |
