To Make Egg Pepper Scramble
Egg - 6 Nos
Gingelly Oil - 3 Tbsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Large Onion - 1 No.
Ginger Garlic Paste
Tomato - 3 Nos
Salt - 1 Tsp
Turmeric Powder - 1/4 Tsp
Coriander Powder - 1 1/2 Tsp
Pepper - 3 Tsp
Water - 1/4 Cup
Coriander Leaves
Method:
1. Pound some ginger and garlic, keep it aside.
2. Take gingelly oil in a pan, add mustard seeds and cumin seeds.
3. Once the mustard seeds start splattering, add the chopped onions and roast until they are slightly transparent.
4. Add in the ginger garlic paste and curry leaves. Roast for a couple of minutes.
5. Add in the chopped tomatoes. After 2 mins, add salt, turmeric powder, coriander powder and mix it all well.
6. After 2 mins, add pepper powder and mix well.
7. Add water to the masala base and mix.
8. Crack open eggs in a large bowl and whisk them all well.
9. Pour this egg mixture into the pan and then wait for 30 seconds without disturbing it.
10. After 30 seconds, keep the flame on a high and gently start mixing it.
11. Once the eggs are half cooked, add in the chopped coriander leaves. Mix it well.
12. When the eggs are cooked as well as moist, turn off the stove, add in the pepper powder and mix it well.
13. Spicy, peppery egg pepper scramble is ready to be served.
14. You can have this scramble as it is or you can make dosas with it as shown in the video.
