Take mint leaves, coriander leaves and water in a mixer jar and grind them all into a nice paste. Keep it aside. 2. To a big bowl, add the gram flour, rice flour, turmeric powder, salt, red chilli powder, asafoetida and cumin powder. 3. Mix it all well and add in the chopped curry leaves, coriander leaves and mint leaves. 4. Then add in the halved cashewnuts and mix it all well. 5. Heat oil and add it to the pakora mixture. Mix well. 6. Add the mint and coriander leaves paste. Mix well and add water. 7. Keep mixing it all until it is like a firm batter. 8. Heat some oil in a kadai. 9. Drop in the pakora mixture in small batches and fry them until they are golden brown in color on all sides. 10. Once done, remove the pakoras from the kadai and serve them with along with some hot chai/coffee. Cashewnuts are a lot of fun, anything made with them are so rich and tasty.
