| Video Discription | IRACHI PATHIRI | sweet and spicy Irachi Pathiri | For chicken preparation Chicken: 250g Ginger Garlic paste : 1 tbsp Chili powder : 1 tbsp Turmeric powder :¼ tbsp Lemon juice : ½ lemon Salt to taste For Meat Filling : Chicken : 250g Onions : 4 medium size Ginger Garlic : 1 tbsp Green Chilies : 4 Coriander leaves : A handful Curry leaves : A handful Cashew nut : 12 Raisin : A handful Coconut Oil : 2-3 tbsp Salt to taste For Pathiri All Purpose Flour/Maida : ½ cup Wheat flour : 1 cup water : as needed Salt to taste For deep fry Coconut oil : 250g For Egg Coating & Frying Egg : 2 Sugar : 1tbsp Cardamom Powder : a pinch Ghee for shallow fry Cook the cleaned chicken with chili powder turmeric powder ginger Garlic past half of lemon juice and salt. Let it cool. Shred the cooked chicken pieces with your finger. Heat coconut oil in a pan and add the finely chopped onions ginger, garlic, green chillies, curry leaves and salt. Continue to cook till the raw smell goes, around 2-3 mins. Add the shredded chicken and cook for 5-7 minutes on low flame, till everything is combined well and add cashew nuts and raisins and cook 2-3 minutes.At last add coriander leaves give a stir,and off the flame. Combine plain flour, wheat flour and salt Add water gradually and make a soft dough similar to that of chapathi dough. Make balls from the dough.Roll out each ball into small rounds. Spread the filling 2 tbsp on a rolled out pathiri, leaving half an inch from both sides. Place another rolled out pathiri on top of this and press together the edges to seal it. Turn the filled pathiri upside down (refer notes for details). Lift the bottom pathiri and start folding the edges inside, to make a pleated border. Repeat this process till all pathiris are done. Heat oil for deep frying in a pan. Add stuffed pathiris one by one and fry it till it turns golden brown. Fry pathiris on med-high flame. In a bowl add 2 egg 1tpsn sugar and 1tbsn cardamom powder beat well. Dip the fried pathiris in mixture and shallow fry it in a pan. Cook for a few mins, make sure you turn cooked on both sides.
