| Video Discription | #alybites #alylazaro #easycooking #foodcommunity #sweetfood #sweettooth #asiancooking #quickmangostickyrice INGREDIENTS: Yields 1 to 2 servings 1 cup of Coconut Milk 3/4 cup Brown Sugar Pinch of salt 1/2 tbsp Cornstarch 1/2 cup Glutinous Rice (soaked) Water Mango Fruit (sliced) White Sesame Seeds (toasted) Wash glutinous rice until it's clear and soak with water overnight. Alternatively, you can let it sit for about 1 to 2 hours. 1. Set aside about 40-50 mls of coconut milk in a cup for slurry later. 2. In a saucepan, pour coconut milk and brown sugar. Mix it well until sugar is completely dissolved. 3. To make the mixture slurry, in a small cup, add cornstarch with the reserved coconut milk. 3. Now add the slurry into the saucepan with Coconut milk mixture. Turn up to medium heat and gently combine properly. 4. Switch off the heat and add a pinch of salt. Put it back to medium heat and give it another stir and your coconut milk sauce is ready. 5. In a steamer, heat up the water until it boils. 6. Drain soaked rice and place it in another layer of steam using a cloth fabric. (Ideally, a Muslin Cloth or Cheese Cloth should be used but I did an improvised since I don't have any. I used a thin hanky which I don’t use anymore.) 7. Let it steam for 30 to 40 minutes. 8. Once cooked, take off from the heat and add the coconut milk sauce and give it a good mix. Cover and let it sit for 30 minutes. 9. Put the sticky rice in a bowl, splash a bit of the remaining coconut milk sauce and top it with sliced mangoes. 10. Garnish with toasted white sesame seeds. 11. Mango sticky rice is ready to serve. Happy tummy! 🐷 |
