| Video Discription | Sweet Pongal is a creamy, sweet porridge made with rice, mung dal, flavored with cardamoms and dry fruits for Pongal festival. There are different ways of making it, and this is how I make it. Ingredients: 🔸½ cup rice 🔸⅓ cup moong dal. 🔸3 cups water for pressure cooking 🔸½ cup jaggery chopped or jaggery powder tightly packed. 🔸½ cup water for making the jaggery syrup 🔸 ½ teaspoon cardamom powder 🔸2 to 3 tablespoons Ghee 🔸12 to 15cashews 🔸1 tablespoon golden raisins 🔸METHOD : Take a small pan or kadai & add both the rice and moong lentils.On a low flame roast both the rice & moong dal till they become aromatic, make sure they are not brown. Transfer to another bowl & rinse both the roasted rice and moong dal a couple of times with water.Drain well and then add them in a pressure cooker along with 3 cups water. Pressure cook on medium heat for about 8 to 9 whistles. Once the pressure settles down, check consistency of the rice and lentils. Check to see if the rice and lentils have softened nicely and is mushy. If it isn't cooked well then add ½ to 1 cup hot water and mix very well. Meanwhile, Chop the jaggery to get about ½ cup tightly packed. We do not like it very sweet, and this amount is perfect. For more sweetness, you can add ¼ cup more. Now take ½ cup water in a pan. Add in the chopped jaggery and cook on a low to medium flame, until the jaggery melts completely (stir and break the jaggery chunks in between with a spatula so that they melt easily.) Strain the jaggery syrup through a sieve and directly add it in the cooked rice+lentils mixture. Add in the crushed cardamom and mix well. The pongal will thicken as it cools. So if the mixture looks thick, you can add ¼ to ⅓ cup hot water. In another pan, heat 2 to 3 tbsp of ghee. Add in the cashews and fry them. Then add 1 tablespoons raisins. fry until the raisins swell. Add the fried cashews, raisins along with ghee to the cooked rice & moong. Mix well.
