In a mixing bowl, add the all-purpose flour or maida and a pinch of salt. Mix well. Add water little by little to form dough. 2. Add a teaspoon of oil and knead well. Add another teaspoon of oil and knead for few more minutes. Smear oil on the dough, cover and rest for 2 to 4 hours. More the dough is rested better the Holige will be. 3. Take a medium size coconut. Grate the coconut with the help of a coconut scraper. Alternatively, cut the coconut into small pieces and process in a food processor. Grind coarsely with 2 – 3 Tablespoons of water. 4. In a pot add jaggery and ½ cup water and boil to dissolve jaggery on medium flame. Strain the dissolved jaggery with the help of a strainer to get rid of impurities. 5. Boil the jaggery syrup on medium heat until you see lots of bubbles. Do not over-cook. Otherwise the stuffing will become hard. We are not looking for hard ball consistency here. If you are not sure, add few drops of syrup in a bowl of water. The syrup should not dissolve in water and comes together(not hard ball). 6. At this point add the coconut and mix well. Keep stirring. After about 5 minutes, the mixture will become thicker and changes in colour. 7. Add the poppy seeds and cardamom powder, mix well. Add one Tablespoon of oil or ghee, mix well. Cool the mixture completely. 8. After resting the dough for 2 hours, knead the dough again by adding few spoons of oil in between. You will get soft dough. Make medium size balls out of it. 9. Once the coconut jaggery mixture is cooled completely, make medium size balls. 10. Take a dough ball, flatten around edges. Make about 4 inch circle and place the coconut stuffing in the centre. Gather the edges to the centre to cover the stuffing. Pinch off the excess dough, seal the end. 11. On a greased nylon sheet(Holige paper), place the stuffed ball(sealed side down). Gently pat the ball with fingers, then use a greased rolling pin to roll the Holige. Roll evenly, gently over the edges. 12. Put the Holige onto a hot greased pan and cook on both sides.
