It is prepared using wheat flour and spinach (palak leaves), green chilli and salt. Little sugar is added which helps to prevent the spinach (palak leaves) from discoloration when gridded to a smooth paste The green colour of the palak or spinach puri gives a appealing look to the poori and makes it a favorite recipe among kids. Do try this recipe and share your feedback...😊 YIELD : 18 POORIS/PURIS INGREDIENTS FOR PALAK/SPINACH POORI:: * Wheat flour - 2 1/2 cups * Palak leaves - 250g or 2 1/2 cups * Green chillies - 1 * Sugar - 1/4 tsp * Salt - 1/2 tsp * Oil - for deep frying + 1 tbsp METHOD: * Take the palak leaves in a mixie jar and add a green chilli. * Add 1/4 tsp of sugar. Adding sugar helps to prevent the discoloration of palak leaves. * Grind it into a smooth paste. * Take a mixing bowl and add 2 1/2 cups of wheat flour. * Add required amount of salt. I used about 1/2 tsp of salt. Mix well. * Add the palak mixture little by little. * Mix them well to form a soft dough. * Add about 1 tablespoon of oil to the dough and mix well. This helps the dough from drying. Cover and rest for 10 minutes * Grease hand with oil and take a small portion of the dough. Make a small sized ball. * Dust the poori making base with wheat flour and keep the ball shaped dough and roll it into the poori shape. * Heat oil for deep frying. To check the correct temperature drop a small dough in oil. It should raise immediately. Then the oil is of correct temperature. * Drop the poori in hot oil and deep fry it. Repeat the same procedure for the remaining dough. * Healthy yummy palak poori is ready !!!
