| Video Discription | This video is about making a healthy sambar. Without oil. Ingredients-(For 6 people) Pigeon pea(Toor dal or arhar dal)-1cup (soaked for 15-20 minutes) Eggplant(baigan)-1 small Pumpkin(kaddu)-small piece Carrot(gajar)-1 Tomato-3 Onion(pyaz)-2 Green peas-1/4th cup Bottle guard(lauki)-small piece Beetroot-1/2 piece Potato(aloo)-2 (medium size) Drumstick(sahjan)-1 Beans-3-4 Salt-as per taste Turmeric powder(haldi powder)-1/2 tsp Curry leaves(kadi patta)-10-12 Dhaniya powder-2tsp Kashmiri chilli powder-1tsp(increase as per taste) Fenugreek powder (methi powder)-1/2 tsp tamarind pulp(imli)-as per taste Mustard seeds(rai)-1 tsp Onion chopped-1/2 asafetida powder(heeng powder)-1/2 tsp coriander leaves (dhaniya patta)- some Water-as required Method- 1) Wash and soak the toor dal for 15-20 minutes to reduce cooking time. 2) Wash and cut all vegetables into small (square) pieces. 3) In a pressure cooker add the dal, vegetables ,6 cups of water,1 tsp salt and haldi powder. 4) Pressure cook on full flame for 1 whistle.Lower the flame and cook till 2 whistles. 5) Allow the cooker to cool down. 6) To the cooker add drumstick pieces ,curry leaves and cook for 5-10 minutes till they are cooked. 7) Meanwhile dry roast red chilli powder, dhaniya powder, and methi powder in a vessel on low flame for 1-2 minutes till the raw smell goes off. 8) Add the roasted masalas into the cooker and mix well. 9) Add hot water at this point if required to adjust the consistency of sambar. 10) Add tamarind pulp and salt as per your taste and cook for 1-2 minutes. 11) Meanwhile for the tempering heat a vessel .Add mustard seeds to splutter and lower the flame. 12) Add chopped onion, some curry leaves and roast for 1 minute. 13) Add heeng powder and roast for 1 minute .Add little water to avoid it from burning and allow it to evaporate. 14) Add this tempering into the cooker ,mix well and cook for 1-2 minutes . 15) Switch off the flame and garnish it with coriander leaves.
