Hi,in this video we can see how to make Navarathri Special 9 rice varieties in Tamil.
NAVARATHRI SPECIAL 9 RICE VARIETIES
INGREDIENTS REQUIRED FOR MAKING ALL RICE VARIETIES
Cooked rice - 9 cups
pomegranate - 1
grated mango - ¼ cup
moong dal - 2 tbsp
foxtail millet - ½ cup
horse gram - 4 tbsp
grated coconut - ½ cup
sesame - 4 tbsp
green chilies
bengal gram dal
urad dal
peanut
cashew nut
dried red chilies
ghee - 4 tbsp
cardamom powder - ½ tsp
turmeric powder
sugar - 1 tsp
cumin
Lemon
raisins
curry leaves
Curd
Milk - 1½ cup
palm sugar
asafoetida
water
oil
1.THINAI SARKKARAI PONGAL (Time : 0.35 - 2.55)
METHOD OF PREPARATION
1.Roast 2 tbsp moong dal until the raw smell goes.Colour should not change.Keep it aside.
2.On the same pan roast ½ cup foxtail millet until the raw smell goes.Colour should not change.
3.Wash moong dal and foxtail millet 2-3 times and soak for about 30 minutes.
4.Cook them in a pressure cooker with 1 cup water and 1 cup milk upto 5 whistles.
5.Melt ¾ cup jaggery with little water.
6.Open the cooker once the pressure goes.Add the filtered jaggery syrup and let it boil.Add 2-3 tbsp ghee and mix well.
7.In a small pan add some ghee and fry cashew nuts and raisins.
8.When the sakkarai pongal begins to boil add ¼ tsp cardamom powder and the fried cashew nuts and raisins.
2.SESAME RICE /ELLODHARAI (Time : 2.56 - 4.20)
METHOD OF PREPARATION
1.Roast 1 tbsp bengal gram dal,5 dried red chilies,1 urad dal,4 tbsp sesame and some curry leaves.
2.Grind them to a nice smooth paste when it cools down.
3.In a kadai add some sesame oil,mustard,1 tsp urad dal,1 dried red chili and some curry leaves.
4.Add the sesame paste and saute for 2 minutes.And add 1 cup cooked rice and required salt and mix well.
3.HORSE GRAM RICE / KOLLU SADHAM (Time : 4.22 - 5.30)
METHOD OF PREPARATION
1.Roast 2 tsp horse gram and powder it.
2.In a kadai add some oil,mustard,1 tsp urad dal,1 tsp bengal gram dal,1tsp peanut and saute for 2 minutes.
3.Add 1 green chilies,curry leaves,powdered horse gram and cooked horse gram and mix well.
3.Add 1 cup cooked rice and required salt and mix well.
4.This rice is especially made on sundays.

4.POMEGRANATE RICE(Time : 5.34 - 6.45)
METHOD OF PREPARATION
1.In a kadai add some oil,mustard,1 tsp urad dal,1 tsp bengal gram dal,1 tsp peanut and ¼ tsp cumin.Saute for 2 minutes.
2.Add 1 green chili,curry leaves,¼ tsp turmeric powder,required salt and little asafoetida and mix well.
3.Add ½ cup pomegranate juice and little lemon juice and let it boil a little.
4.At last add 1 cup cooked rice and little pomegranate and mix well.
5.CURD RICE(Time : 6.48 - 7.55)
METHOD OF PREPARATION
1.In a bowl take 1 cup cooked rice and add curd and mix well.
2.Add required salt and little milk and mix well to a creamy consistency.
3.In a kadai add some oil,mustard,1 tsp urad dal,1 tsp bengal gram dal,¼ tsp cumin,1 dried red chili,1 green chili,asafoetida and curry leaves.
4.Saute for few minutes and add it to the rice and mix well.
6.LEMON RICE (Time : 8.00 - 9.10)
METHOD OF PREPARATION
1.In a kadai add some oil,mustard,1 tsp urad dal,1 tsp bengal gram dal,1 tsp peanut,1 tsp cashew nuts and saute for 2 minutes.
2.Add 1 green chili,some curry leaves and 2 dried red chilies.Saute for few more minutes.
3.Now add ¼ tsp turmeric powder and little asafoetida and mix well.
4.When it cools down add some lemon juice,1 cup cooked rice,required salt and mix well.
7.COCONUT RICE(Time : 9.12 - 10.30)
METHOD OF PREPARATION
1.In a kadai add some oil,ghee,mustard,¼ tsp cumin,1 tsp urad dal,1 tsp bengal gram dal,1 tsp cashew nut,2 dried red chilies and saute for 2 minutes.
2.Add 1 green chili,curry leaves and 1 tsp chopped ginger.Saute for few more minutes and add ½ cup grated coconut and 1 tsp sugar.
3.Fry the coconut a little it should not change it's colour..
4.At last add 1 cup cooked rice and required salt.Mix well.
8.PALM SUGAR RICE / KALKANDU SADHAM(Time : 10.35 - 11.50)
METHOD OF PREPARATION
1.Cook 1 cup cooked rice with 1½ milk in a pressure cooker upto 2 whisltes.
2.Open the cooker once the pressure goes and add required palm sugar and let it boil.
3.In a small pan melt some ghee and roast cashew nuts and raisins
4.At last add ¼ tsp cardamom powder and roasted cashew nuts and raisins and mix well.
9.MANGO RICE(Time : 11.55 - 12..55)
METHOD OF PREPARATION
1.In a kadai add some oil,mustard,1 tsp urad dal,1 tsp bengal gram dal,¼ tsp cumin and saute for 2 minutes.
2.Add 1 green chili,curry leaves,¼ cup grated mango,¼ tsp turmeric powder and saute until the mango is cooked and the raw smell goes.
3.At last add 1 cup cooked rice and requied salt and mix well.
