| Video Discription | My take on a cheesy bread roll. I added a milky crust for added crunch and milky flavor and used cream cheese for filling :) Ingredients: Dough: 150 gr flour 20 gr sugar 10 gr milk powder 1/2 tsp salt 110 ml warm milk 1/2 tsp yeast 20 gr butter Topping: 40 gr butter 30 gr sugar 1 egg yolk 30 gr flour 10 gr powdered milk 1 tsp vanilla (add a little bit of egg white if the mixture is too densed) Filling: Cream Cheese Steps: 1. Add the yeast to the warm milk and sprinkle a little bit of sugar, set aside for 5 mins. 2. Add all dry ingredients in a bowl and mix. Add the milk and yeast mixture, mix and let it rest for 20 mins. 3. Knead for 3 mins. then add the softened butter. 4. Knead for another 7 mins. scraping the sides and bottom of the bowl im between. 5. Cover and set aside for 1 hr and 30 mins. 6. Once the dough has double in size, divide into 4-5 pcs (depending on your size preference). 7. Gentle form the dough in balls and set aside again for 15 mins. 8. Once the dough has set, gently flatten in an oblong shape and put the cream cheese filling. Roll the dough gently covering the filling. 9. Cover the filled dough and set aside for an hour. 10. Meanwhile prepare the topping. Mix the butter and sugar until well combined. Add the egg yolk and vanilla, whisk until creamy and pale color. Add the flour and powdered milk and continue whisking until creamy in consistency. Add some eggwhite if the mixture is too densed. Put in the piping bag. 11. After an hour, pipe the topping on top of the dough and bake in a preheated oven at 180C for 17 mins. |
