Here's the recipe: Ingredients: 1 small lemon-sized ball of tamarind 2 cups of water 1 medium-sized tomato, chopped 1 teaspoon black peppercorns 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1-2 dried red chili (adjust to your spice preference) 1/4 teaspoon turmeric powder 1/2 teaspoon asafoetida (hing) 1 sprig of curry leaves 2-3 cloves of garlic, minced (optional) 1 tablespoon ghee or oil Salt to taste Chopped coriander leaves for garnish Instructions: Soak the tamarind in 2 cups of warm water for about 15 minutes. After soaking, extract the tamarind juice by squeezing and filtering it. Discard any solids and set the tamarind water aside. In a mortar and pestle, crush the black peppercorns and cumin seeds to a coarse powder. Alternatively, you can use a spice grinder. In a medium-sized pot, add the tamarind water and chopped tomatoes. Bring it to a boil on medium heat and let the tomatoes cook until they become soft and mushy. Now, add the crushed pepper and cumin mixture, turmeric powder, and salt to the pot. Stir everything well and let it simmer for a few minutes. In a separate small pan, heat the ghee or oil over medium heat. Add mustard seeds, dried red chili, and asafoetida. Let the mustard seeds splutter. If you're using garlic, add it to the pan and sauté for a minute until it turns aromatic and slightly golden. Pour the seasoned mixture into the simmering rasam pot and mix well. Add the curry leaves as well. Let the rasam simmer for a few more minutes on low heat, allowing all the flavors to meld together. Adjust salt and spice levels as per your taste. Garnish the pepper rasam with chopped coriander leaves. Your Pepper Rasam is ready to be served!
