Ulam refers to a group of traditional Malay vegetables, usually consumed raw as salad or side dishes. “Ulam Raja” means “King’s Salad”.
The scientific name for Ulam Raja is Cosmos caudatus (koudetus). It is widely used in south-east Asia as a traditional medicine, which has been reported as a rich source of bioactive compounds such as ascorbic acid, quercetin, and chlorogenic acid.
Originating from Latin America, the plant is widely available in south-east Asian countries including Malaysia. The plant can grow up-to 3 meters height and bears pink or purple flowers. It is usually eaten raw as salad or side dishes by dipping in shrimp and chili paste. As a local delicacy, Cosmo caudatus leaf can be seen served in hotels and restaurants across Malaysia.
