| Video Discription | How To Make Lemon Rice - Healthy Turmeric Lemon Rice Recipe - Quick Lunch Or Dinner Recipe Lemon rice is widely prepared in South India.It is prepared mixing cooked rice with special seasonings like mustard seeds, fried chana and urad dal, peanuts, curry leaves, chillies and lemon juice. I have skipped using chana and urad dal due to lack of availability and I have used cashew nuts instead. My family likes it more with cashew nuts and the sweetness from the cashew nuts goes very well with the sourness of the dish. It is very quick and easy to make with leftover rice or you can even cook fresh rice. I sometimes even have it for breakfast. Usually any short grained rice is used but you can even use Basmati rice. Choose a non sticky rice for this recipe. * 1 tablespoon fresh lemon juice * 15 gm cashew nuts * 15 gm/ 1 tablespoon raw peanuts ( I have used skin on peanuts but you can even use skin on peanuts.) * 1/2 teaspoon black mustard seeds(rai) * 1/4 th teaspoon cumin seeds(jeera) * 1 teaspoon zest of lemon. Use the fine side of your grater to scrape off the outer yellow part of the lemon. See to it it you are not scraping the white skin underneath as that is quite bitter. * 1/2 teaspoon salt. Add more if rice tastes bland. * 1 teaspoon sugar * 1 dried red chilli * 2 green chillies (optional) * 1/2 teaspoon finely chopped ginger * 10 to 15 fresh curry leaves (optional) * 1/2 teaspoon turmeric powder (haldi) * 1 tablespoon butter * 1 teaspoon oil Serve this with a creamy vegetable , prawn or chicken curry.
