MUTTON CHAAP: SERVES: 5 INGREDIENTS: Mutton(ribs and thigh pieces, small )-1kg Unripe Papaya-250gm, Garlic Paste-3tbsp, Ginger Paste-3tbsp, Red Chilli Powder-2tbsp, Salt-to taste, Curd-3tbsp, Kewra Water-5ml, Rose Water-5ml, Ghee- as required, Saffron-few strands, Cloves-8 nos, Green Cardamom-8 nos, Black Peppercorns-1tbsp, Mace-1 flower, Nutmeg-1/2 piece, Cinnamon-1/2", Black Cardamom-1 (seeds only), PROCEDURE: 1. Finely ground the garam masalas. 2. Marinate the mutton with all the ingredients. 3. Cook in ghee till mutton gets tender. 4. Serve hot with rumali roti.
