This is made with puran poli. Basically the main ingredient for this amti is the water in which the dal for puranpoli is cooked. We use that strained water as main ingredient. There are many different variations to make this amti. But I will share how I make amti in my home. You can try this recipe at home and srop a comment for me. Ingredients: • 1 tbsp Oil • Sliced Onion • Sliced dry Coconut • 1 tsp Coriander seeds • 1 tsp white Sesame seeds • 1/2 tsp Poppy seeds • 4~5 black Peppercorns • 4~5 Cloves • 1 Cinnamon stick • 1 bay leaf • 1 sliced Onion • Minced Garlic • 2 tbsp Oil • 1 tsp Mustard seeds • 1 tsp Cumin seeds • A pinch of Hing • Curry leaves • 1 tsp Red chili powder • 1 tsp Kashmiri Red chili powder • Dal stock • Sugar to taste • Salt to taste • Finely chopped Coriander leaves Method: • Heat up oil in a pan and add onion. • Fry well until onion gets reddish color. When onion begins to turn reddish, move it along the edge of the pan and add dry coconut in the remaining space. • Fry it well together and move it along the edge of the pan and add coriander seeds in the remaining space. • Fry it well and add white sesame seeds and poppy seeds. • Fry it well together and add black peppercorns, cloves and cinnamon. • Fry everything well together and add bay leaf. • Fry well and let the mixture cool down. • Transfer the roasted mixture into a blender jar and blend it into fine paste. • Heat up oil in a pan and add mustard seeds. • When mustard seeds pop up add cumin seeds, garlic, hing, curry leaves, blended masala, red chili powder and Kashmiri red chili powder and fry everything well together for about 2-3 minutes. • Add the dal stock, sugar and salt and mix well. • Bring it to boil and simmer the amti well for about 8-10 minutes. • Add coriander leaves and katachi amti is ready.
