Kadai Vegetable Gravy is the best accompaniment for any Indian Bread variety like Naan, Chapati, Kulcha and Phulkas. It is a rich and complex dish. To get it right, the recipe uses a wide vareity of spices to elevate the flavor of the vegetables.
We are happy in sharing this recipe which is a perfect Restaurant Style Kadai Vegetable Gravy.This recipe has the right amount of spices used, celebrate the crunchy vegetables in a butterly delcious gravy.

For Kadai Masala Powder:
1. On Low Flame , Dry roast Poppy seeds, coriander seeds, red chillies, star anise, fennel, cumin, pepper, clove,cinnamon, cardamom.
2. Once it turns aromatic , cool and grind to fine powder.
3. Seive the powder and store in air tight box.
For Base Paste:
1. On Medium flame, add oil, sauté Sliced Onion and Tomato. Add salt and Sauté for 3 mins.
2. Cool Mixture, Transfer to Blender , add cashew and peanut and grind to smooth paste.
For Kadai Vegetable Gravy:
1. On Medium Flame, add oil , diced Onion and capsicum and Sauté for 2 mins.Transfer to bowl once done.
2. Add oil to the same pan, add Carrot, Beans, Babycorn, salt and tumeric. Sauté for 3 mins till they turn crunchy.
3. Add oil to the same pan, add Califlower,Fresh Peas, salt and tumeric. Sauté well, add 2 Tbsp water to create steam and cook with lid closed.
4. The Steam helps the Califlower and Peas to cook through. Sauté for another 2 mins and transfer all sautéed veggies to bowl.
5. Heat a Kadai, On medium flame add Butter, bay leaves, onion, green chilli, garlic, ginger garlic paste, tomato and Sauté well till raw smell goes.
6. Add salt, Kashmiri chilli powder, garam masala and Sauté well till oil separates.
7. Add kadai masala powder, Base paste, coconut paste and water. Cook gravy well for 5 mins.
8. Add water occassionally to adjust consistency.
9. Add Lemon Juice, Sugar and Sautéed Vegetables. Add the vegetables at the last to retain crunch.
10. Add Kasuri Methi and finish off with Butter and coriander leaves.
Serve the Super tasty Restaurant style KADAI VEGETABLE GRAVY with Naan, Chappati or any Indian Bread.
