There are literally thousands of small snacks around in China. Many of them come from the factory but also a lot of them are still hand made in villages and small towns outside of the big cities. Each region has its own snacks all depending on the vegetables available and the taste of the local people. This time my travel brought me in a village not far from Changsha, Hunan where I had the pleasure to learn how to make this dried jujube red date snack.
Chinese people are real specialist when it’s about drying things in the sun. I will never forget my first impressions upon arriving in China and driving through the country side. Wherever I looked I saw whole forecourts of houses covered in different kinds of vegetables. From peppers to sweet potato, green vegetables to pumpkin, the variety was just amazing. Also this time the practice of sun drying played an important role.
When arriving at the farmer’s house I already could lay eye on today’s project’s finished product. The dried date snack nicely and evenly spread on a big piece of wood, already dried and ready to eat. Impossible to hold back I had a small try and was surprised by the great taste and consistency.
Sour flavor is not really something for Chinese peoples’ taste but in this case I had to admit the the farmers knew how to find the perfect balance. Sour, sweet, a touch of sharp onion flavor with the perfect amount of chili spiciness just as a after taste in your mouth. The consistency was chewy but firm and upon my first try I could not make up in my mind if there was some sort of starch or gelatin used to make this tasty snack or it might just be kept all natural in production. After such a taste experience I was even more excited to start my new learning project with my today’s master: Aunty.
It was not the most easy task to get information from a shy Aunty but as the filming went on she too slowly warmed up. But even without many words I soon understood that key for de delicious taste of the dried snack was the quality of ingredients. Each and everyone of them grown carefully in Aunty’s own garden it was pure joy to gather all the delicious components. I am safe to say that also many Europeans would see this as true upgrade in standard of living.
After all ingredients were collected and prepared the preparation was simple. Following all the precession weighting when making Mooncakes I was relieved to get back to Chinese-style rule-of-thumb measuring. Pumpkin and dates simply peeled and cooked soft, Purple Shiso, dried spring onion roots and pepper finely chopped, all of it mixed in a bowl and stirred till forming a nice and smooth paste. No starch or gelatin inside, everything just nicely held together by the sticky jujube date. Add some white sugar for extra sweetness and my first hand made Chinese snack was ready to get dried.
It was the great shape and taste of this simple local snack that directly inspired me to make it into a western-style dish. A small “Thank you”-gift for Aunty...her first ever western style plate made with the snack that she has eaten already a thousand of times, just this time a bit different.
