| Video Discription | Sweet Poli / Paruppu Poli / Puran Poli is a traditional Indian sweet recipe widely prepared in South India, Maharashtra and Gujarat. The ingredients and the preparation varies slightly in each states. It uses flour , jaggery & Chana dal as main ingredients and it is soft and delicious. Give it a try. Ingredients: ************ Maida- 1 cup Jaggery- 3/4 cup Chana Dal- 1 cup Turmeric powder-1/4 tsp Crated coconut- 1/4 cup Cardamom powder- 1/2 tsp Ghee Oil Salt Preparation: ************* I have provided tips to make poli soft and tasty. Take 1 cup maids in a bowl, if you doesn't want to use maida then use wheat flour. Add 1/4 tsp turmeric powder, little salt & 1 tsp ghee and mix it without adding any water initially. Then pour water step by step and & knead the dough. Softness of the Poli depends upon kneading of the dough. Do not knead like chapati consistency, stop kneading a little before that consistency. After kneading the flour, add 3 tsp oil to this and mix it well. The oil has to marinate with the dough for at least 2 hours. so close the lid and leave it for 2 hours. while we leave the dough for marination, we can make the stuffing (Pooranam) ready. Soak 1 cup chana dal in water for 30 mins. Boil the chana dal in a pressure cooker for 3 whistles. As we have soaked it for 30 mins and cooked it for 3 whistles, it will be soft and can be mashed easily. Mash the dal using masher or blender. I have used 3/4 cup powdered jaggery, if you need more sweetness add 1 cup jaggery to the mashed dal. add 6 powdered cardamom and mix well. Maintain low flame. If you keep it in high flame it will get burnt. when the jaggery starts to melt, add 1 cup crated coconut & mix it well. If you doesn't want to add coconut skip it. The Jaggery i have used was without any dust particles and clean. If you find any dust particles in jaggery, make jaggery syrup filter it and use. Now all the ingredients bond together and gets thick. Add 1 tsp ghee now and mix it well and once the ghee melts switch off the flame and allow it to cool down. Once it is cooled down, make them into round shapes and keep it aside. we will use this stuffing with the marinated dough. After 2 hours marination, dough will be really soft. spread small amount of dough in a butter paper or plantain leaf and place the stuffing in center and cover it with dough. Remove the extra dough from it. Keep it in the butter paper and spread it like paratha with hands or using roti rolling pin. Apply some oil in the palm while spreading it with hands. In a heated dosa pan, add 1/4 tsp ghee or oil and place the poli and remove the butter sheet. Cook well on both side by turning it around & applying some ghee. As we have added jaggery, this may get burnt quickly so turn it over quickly and repeat it again to cook both sides well. Maintain medium flame throughout.It takes 2 to 3 mins to cook.
