INGREDIENTS :
-Sella rice 1kg ( Soaked for 2hours )
-Mutton ( 1kg )
-Onion ( Sliced 4big size )
-Ginger garlic paste ( 3 tbsp )
-Turmeric powder
-Coriander powder
-Red chilli powder
-Salt to taste
-Garam masala powder (1 tbsp)
-Yogurt (1 cup)
-Cinamon stick
-Black cardamom
-Green cardamom
-Mace
-Star Anise
-Cubeb - caraway seeds /kebab chini - sahizeera
-Fried onions
-Mint leaves
-Potatoes
Direction:
- In pot add oil , cinnamon sticks, black pepper, green cardamom, black cardamom mace and add onions fry until translucent.
-Add mutton and mix well for 1minute.
-Add ginger garlic paste and mix well and add turmeric powder, coriander powder,red chilli powder, garam masala powder, kashmiri red chilli powder, salt and yogurt mix well & cook for 2 minutes.
-Add water and cook for 8 to 10 minutes.
-Add biryani masala, fresh mint leaves, fried onion, dry plum & mix well and cook until oil separates & set aside.
-In a big pot ,add 1 litter water,add cinnamon stick,cloves,mace, green cardamom, black cardamom, start Anise,cubeb,caraway,bay leaves, lemon juice, cooking oil,mint leaves, coriander leaves,salt and cover & boil the water.
-Add soaked rice & cook 80% and set aside.
-In a bowl take boiled & fried potatoes add prepared biryani masala mix well & set aside.
For Assembling:
-In a separate pot ,add mutton,boiled rice, fried onion,fresh mint leaves,biryani masala, potatoes, coriander leaves,saffron milk,kewra.
-Cover and steam cook on low flame for 8-10 minutes.
-Garnish with fried onion, fresh mint and serve with raita
