| Video Discription | Instructional video on how to make the best possible authentic New Mexico beans. This is the basic preparation before they are to be refried. Recipe 4 cups pinto beans 3 TBS lard 5 tsp salt 4 1/2 quarts water Remove bad beans. In a 5-or-so quart pot, rinse healthy beans thoroughly at least two times. Fill with 4 1/2 quarts of water. Bring to rapid boil. Cover. Simmer 5 1/2 hours. Check to make sure beans have not risen above water. If they have, boil water in a small pan and add it to the pot so that the liquid level is above the beans. After 5 1/2 hours add salt and mash beans 10-15 times with potato masher. Stir. Return to boil and simmer another 30 minutes. Serve or re-fry. |
