| Video Discription | Easy Sooji Halwa / Semolina Halwa (Fiji Indian Style) Ingredients: • 2 1/4 Cups Water (Or 2 1/4 Cups Milk) • 1 Cup Coarse Semolina / Sooji • 1/2 Cup Ghee • 3/4 Cup Sugar ( Or 1 Cup Sugar For A Sweeter Halwa) • 1/4 Cup Sultanas (Washed And Rinsed) • 4 Pods Of Crushed Cardamom Method: 1) Take a small pot, put it on medium heat, add water and sugar and heat it until the sugar has dissolved. 2) Take another pot, put it on medium heat, add 1/4 cup of ghee and heat it for 1 minute. Add crushed cardamom seeds, give it a mix and cook it for 30 seconds. 3) Add semolina or sooji and fry it for 10 minutes or until the semolina has a light brown colour stirring it continuously. If you are using milk than you need to fry your semolina until you get a medium brown colour. 4) Once the sugar has dissolved, lower the heat and continue heating to keep it warm. 5) When the semolina gets a light brown colour, add sultanas and cook it for 2 minutes stirring it continuously 6) After 2 minutes, scrape the sides, turn the heat off to the sugar water and add it to the sooji, mix it well, put a lid on and cook it for 1 minute. 7) After 1 minute, add remaining ghee, mix it well and cook it for a further 2 minutes or until it thickens slightly, stirring it continuously. 8) After 2 minutes, turn the heat off and serve it warm or cold.
