For the garlic spice powder, take coriander seeds, garlic cloves and cumin seeds in a mixer jar. Grind them once. 2. Then add red chili powder, salt and curry leaves. Grind everything into a fine powder and keep aside. 3. Peel off the skin and cut the potatoes into small cubes and put them in a bowl of water. 4. Take a wide kadai and pour oil in it. 5. For tempering, add the chana dal, urad dal, mustard seeds and cumin seeds. 6. Once the mustards start splattering, add in red chilies, curry leaves and hing. 7. Drop in the potato pieces and mix well. Add salt and turmeric powder. Mix well. 8. Saute for a few mins and then add water. 9. Mix and add the ground garlic spice powder. 10. Mix well and cover the kadai with a lid. 11. Cook the potatoes for 10 mins. 12. Turn off the stove and transfer the fry to a serving bowl. 13.
