Combine into a small bowl soy, rice vinegar, hoisin, oyster sauce, and chili and combine. Slice chicken breast into bite-size pieces. Start frying the chicken with a bit of oil on medium high heat. 1 min on each side then remove the chicken from the pan even if it's not fully cooked. We just want some color. Add mushrooms into the pan on medium heat with a splash of water and cook the mushrooms under occasional stirring for 4-5 minutes until fully collapsed and the water is evaporated. At this stage start heating up a pot with water and a pinch of salt for the noodles. Add the rest of the vegetables into the pan with the mushrooms with another bit of oil and keep frying until the noodles are ready. Add noodles into a pot of water and shake them with a tongue until they loosen up. Cook the for 3 minutes. As soon the noodles are ready add them to the pan and add in the chicken and the sauce. optional you can make a starch slurry with 50g of water and 1 tsp of cornstarch and mix. Add this to the pan to thicken everything. Keep frying everything in the pan for 30 seconds and add everything to a bowl.
