Here's a basic recipe for making Ela Ada: Ingredients: For the dough: 1 cup rice flour A pinch of salt Water (as needed) For the filling: 1 cup grated coconut 3/4 cup jaggery (you can adjust the sweetness to your preference) For assembling: Banana leaves (cut into 5-6 inch squares) - If you can't find banana leaves, you can use parchment paper or aluminum foil as a substitute. Instructions: For the filling: Heat a pan on low-medium heat and add the grated coconut. Add the jaggery and cook, stirring continuously until the jaggery melts and combines with the coconut. This should take about 5-7 minutes. Remove it from the heat and let it cool down. Once cooled, divide it into small lemon-sized balls and set aside. For the dough: In a mixing bowl, combine the rice flour and a pinch of salt. Gradually add water, a little at a time, and knead the flour into a smooth, pliable dough. The dough should be soft and not too sticky. Cover it with a damp cloth and set it aside. Assembling the Ela Ada: Take a banana leaf square and lightly grease it with coconut oil to prevent sticking.
