Set aside. In a large vessel, add the tomatoes, tamarind paste,salt,oil and cook on high flame for 2 minutes. Reduce flame and cook for at least an hour. Mix the tomatoes once in a while. Continue to cook till the water is almost evaporated.Turn off the flame.Heat a kadai add mustard seeds, Fenugreek Seeds and dry roast it.Grind into fine powder and add to prepared thokku.Add Chilli Powder and mix well and keep aside.Heat oil in a separate pan. Once hot, add mustard seeds and allow to splutter. Add cumin seeds,hing,curry leaves, Fenugreek Seeds and garlic. Turn off flame and add to thokku.Now turn on flame and cook the tomato mixture till the oil floats on top.Turn off flame. Cool completely and store. செய்முறை: தக்காளியை கழுவி துண்டுகளாக நறுக்கவும். ஒதுக்கி வைக்கவும். ஒரு பெரிய பாத்திரத்தில், தக்காளி, புளி விழுது, உப்பு, எண்ணெய் சேர்த்து 2 நிமிடம் அதிக தீயில் சமைக்கவும். தீயை குறைத்து குறைந்தது ஒரு மணி நேரம் சமைக்கவும். தக்காளியை ஒரு முறை கலக்கவும். தண்ணீர் கிட்டத்தட்ட ஆவியாகும் வரை சமைக்க தொடரவும். தீயை அணைக்கவும். ஒரு கடாயை சூடாக்கி கடுகு, பெருங்காயம் சேர்த்து உலர்த்தி வறுக்கவும். நன்றாக பொடியாக அரைத்து, தயார் செய்த தொக்குக்கு சேர்க்கவும். மிளகாய் தூள் சேர்த்து நன்கு கலந்து தனியே வைக்கவும்.சூடாக்கவும். ஒரு தனி கடாயில் எண்ணெய். சூடானதும், கடுகு தாளித்து, தெளிக்கவும். சீரகம், கீல், கறிவேப்பிலை, வெந்தயம் மற்றும் பூண்டு சேர்க்கவும். தீயை அணைத்து தோக்குவில் சேர்க்கவும். இப்போது தீயை ஆன் செய்து, தக்காளி கலவையை எண்ணெய் மேலே மிதக்கும் வரை வதக்கவும். தீயை அணைக்கவும். முற்றிலும் குளிர்ந்து சேமித்து வைக்கவும்.
