Ghee Mysore Pak
To Make Ghee Mysore Pak
Gram / Besan Flour - 1 Cup ( 250 Ml )
Ghee - 150 Ml
Water - 1/4 Cup
Sugar - 1 Cup ( 250 Ml )
Method:
1. Roast gram flour in a pan on medium flame for 10 mins to make sure there's no raw smell.
2. Seive the roasted flour into a large bowl and keep it aside.
3. Heat ghee in a tempering pan and transfer half of the melted ghee to the flour bowl once it cools down.
4. Mix it well until the flour mixture becomes smooth and lump-free.
5. Apply ghee to all sides of a tin and keep it aside.
6. Pour water in a pan and add sugar to it. Let the sugar dissolve.
7. Transfer flour and ghee mixture to the sugar syrup and mix.
8. Gradually add ghee and keep mixing it.
9. Cook for 10 mins on low flame and add the remaining ghee. Cook until it becomes a thick mass.
10. Mix well and transfer it to the tin greased with ghee.
11. Spread it evely and apply ghee on the top.
12. Set it for 2 hours, remove from the tin and cut into small pieces with desired shape.
13. Traditional soft Mysore Pak is ready to be served.
Carrot Halwa
To Make carrot Halwa
Ghee - 1 Tsp
Grated Carrot - 4 Cups
Boiled Milk - 1 1/2 Cups
Sugar - 3/4 Cups
Cardamom Powder - 1/2 Tsp
Saffron( Optional)
Ghee - 3 Tbsp
Pistachio
Cashew Nuts
Sliced Almonds
Carrot halwa method
Take wide saucepan, add ghee and grated carrot.
Saute for about 10 mins on medium flame. Keep stirring the carrot to prevent burning.
Once the carrot is half cooked, pour the milk.
Cook till the milk is completely absorbed by carrot.
Add sugar and continue to cook until all moisture is evaporated.
Add cardamom powder and saffron strands. Mix well.
Once all the moisture is evaporated, add ghee and mix well
Finally add some pistachios, cashew nuts and almonds.
Gajar ka halwa is ready to be served.
Suryakala
To Make Dough
Maida - 2 Cups
Salt
Ghee - 2 1/2 Tbsp
Water
To Make Sugar Syrup
Water - 1 Cup
Sugar - 1 Cup
Cardamom Powder - 1/2 Tsp
Saffron ( Optional )
To Make Filling
Khoya - 100 Gms
Chopped Nuts
( Cashew Nuts, Pistachios, Almonds )
A Pinch Of Cardamom Powder
Powdered Sugar - 3 Tsp
Method:
1. Take maida, salt and ghee in a large bowl. Mix well to make sure it is mouldable when held.
2. Gradually add water and prepare the dough. Let it sit for 20 mins.
3. Pour water in a saucepan and add sugar.
4. Let the sugar dissolve fully and boil for 2 mins.
5. Add cardamom powder, saffron and boil the sugar syrup for 5 mins. Keep it aside.
6. For the filling, crumple the khoya and to it add, chopped cashews, pistachios and almonds.
7. Then add cardamom powder, powdered sugar and mix everything well.
8. Make the filling into smalls balls and keep them aside.
9. Divide the maida dough into equal portions and roll them slightly thick.
10. Cut the round shaped pieces from rolled out dough, with a cutter.
11. Take two parts, place the khoya ball on one of them.
12. Dab a little water in the edges of dough and place another part over it.
13. Gently press down the edges together and twist the dough as shown in the video.
14. Keep the prepared dough suryakalas aside.
15. Heat oil in a kadai for deep frying and drop in the dough suryakalas.
16. Fry them on low heat until they turn golden brown in colour and remove the kadai by fully straining the oil.
17. Drop the fried suryakalas into slightly warm sugar syrup and let it rest for 10 mins.
18. Place them on a plate and garnish with finely chopped pistachios.
19. Juicy and tasty Suryakalas can be served warm.
Angoori Jamun With Rabri
Ingredients
To Make Sugar Syrup
Water - 2 Cups
Sugar - 1 1/2 Cups
Cardamom pod - 3 nos
To Make Jamun
Unsweetened Khoya - 200 gms
Maida - 3 Tbsp
Baking Powder - 1/4 Tsp
A Few Saffron
Milk - 2 Tbsp
Oil For Deep Frying
To Make Rabri
Full-fat Milk - 1 Liter
Sugar - 1/4 Cup
Cardamom Powder - 1/4 Tsp
A Pinch Of Saffron |
